Burrito options are multiplying in Woodbury and environs as fast as mattress stores.
Mexican food historians can’t agree on how the dish came to be named “little donkey,” but we can be sure that the possibility that it is stuffed with donkey meat is unlikely in Woodbury. Burritos likely started out as modest tacos filled with local agricultural products. But as folks became familiar with them, new variations appeared and were promptly stuffed with people’s favorite options.
