Two historical Lake Elmo sites are being remodeled into restaurants in the hopes of creating more community gathering spaces.
A former fire station will become Tap & Ladder, a family-friendly taphouse. Nearby, a Parks Department building at the corner of Laverne and Upper 33rd will become home to the second location of Machete Cocina Mexicana.
“These projects are truly ‘for Lake Elmo, by Lake Elmo,’” says Brian Heidt, one of the redevelopment leaders. Heidt, along with his wife and partner Amanda Urban, and restaurant owner Julian Ocampo have collaborated closely with more than a dozen local businesses to make their vision come to life. Ocampo is Vice President of Los Ocampo Mexican Restaurants.
The concepts were favored by city council members by a unanimous vote. The decision follows a 2024 Village Area Study in which locals voiced “that they wanted a restaurant, retail space, or a place where residents can meet,” according to Jason Stopa, Lake Elmo Community Development Director.
At Tap & Ladder, “guests can expect a relaxed, welcoming atmosphere,” said Heidt, with a self-pour tap wall offering everything from craft beer and sodas to ready-to-drink cocktails and mocktails.
Heidt explained that diners can look forward to a “menu of approachable favorites like burgers, brats, wings and a Friday fish fry. One of our most unique features will be a dedicated kids’ zone with arcades, a rock-climbing wall, books, toys and firefighter- and first-responder-themed costumes for dress up — creating a place where families can enjoy a great meal together.”
There’s good news for fans of Machete in Woodbury, as the Lake Elmo concept will include the “same authentic flavors and bold creativity… including craft cocktails and margaritas, handmade tortillas, authentic street tacos, and the restaurant’s famous 21-inch ‘Quesadillota.’ (a filled corn quesadilla)” Heidt added that the new location will feature a picturesque patio overlooking Lions Park.

When asked about the inspiration and use of the historic buildings, Heidt explained that Tap & Ladder will continue the fire station’s legacy of a “symbol of service, community, and pride… [by incorporating] displays honoring Lake Elmo’s first responders and local veterans.”
They also have plans to partner with The Patriotic Kenny Foundation, which will benefit from charitable gaming events such as on-site bingo.
The new Lake Elmo restaurants are expected to open in late 2026 or early 2027.
